Penne with smoked salmon and light sour cream

Instructions

  • 1.   Bring salted boiling water to a boil in a saucepan over high heat.
  • 2.   Once boiling, add the penne to the salted boiling water and let them cook according to the time indicated on the package. They should be al dente at the end of cooking.
  • 3.   Meanwhile, cut the slices of smoked salmon into thin strips.
  • 4.   Cut the yellow lemon in half and squeeze it to extract its juice. Remove any seeds if necessary. Then, finely grate the lemon zest. Set aside.
  • 5.   In a bowl, mix the light sour cream, skimmed milk, lemon juice, chopped parsley, and finely chopped chives and dill. Season with salt and pepper to taste.
  • 6.   When the penne are cooked, drain them in a colander and then transfer them to a salad bowl.
  • 7.   Add the strips of smoked salmon and the herb sauce to the penne. Mix well and adjust the seasoning with salt and pepper if necessary.
  • 8.   Grate the reduced-fat Parmesan cheese.
  • 9.   Divide the penne with smoked salmon and cream into plates. Sprinkle with grated Parmesan cheese and grated lemon zest, then enjoy immediately! Serve with fresh lemon wedges.
