1. Melt the butter in a large skillet over low heat.
2. Add the crepe to the skillet, then on one half, place the slice of ham and the grated cheese.
3. When the cheese starts to melt, crack the egg on top, season with salt and pepper, then sprinkle with chopped parsley.
4. Fold the crepe in half and let it cook for 3 minutes over medium heat without flipping it, until the egg is cooked.
5. Serve immediately on a large plate accompanied by a green salad.
