Creamy Rice Pudding

Prepare here with vanilla, the pod can be replaced with extract or a cinnamon stick! The instructions are for a cooking chef, but it's the same in a saucepan or a Thermomix!

Instructions

  • 1.   Optional: Rinse the rice grains by plunging them into boiling water for 3 minutes (use a kettle to save time).
  • 2.   Split the vanilla pod in half lengthwise and scrape out the seeds with the tip of a knife.
  • 3.   Put the rice, milk, cream, sugar, vanilla pod, and seeds (or a cinnamon stick), and vanilla sugar in the bowl of the robot.
  • 4.   Option: If desired, add zest from the citrus fruit of your choice or vary by adding candied fruits or rum-soaked raisins, or even crushed pistachios, or for the classic chocolate version, cocoa powder!
  • 5.   Attach the flexible beater. Set the temperature to 105°C and the speed to mix 3.
  • 6.   When the mixture reaches 105°C, reduce to 100°C and set to mix 3 for 40 minutes.
  • 7.   Cook the rice until it is level with the milk.
    Taste and adjust if necessary (if it is too thick, add milk; if the rice is not cooked, extend the cooking time; if it lacks sugar, etc.).
  • 8.   Let it cool. The rice will continue to absorb the milk as it cools.
  • 9.   Serve this dessert warm or cold. Store it in the refrigerator in individual ramekins or in a large pot. Don't hesitate to add a splash of milk when serving to adjust the consistency after cooling.

Notes & Suggestions

  • The liquid cream can be replaced with butter or, for a lighter but less creamy version, with milk.
    Feel free to use a plant-based milk, such as almond milk.
