Broccoli and Emmental Gratin

The best way to make broccoli enjoyable, which, let's admit it, doesn't have the best reputation in general, is to cook it in a gratin! It's super simple and so effective! Just accompany it with fresh cream, grated Emmental cheese, a pinch of grated nutmeg, and you're good to go! Instructions

  • 1.   Preheat the oven to 475°F (240°C).
  • 2.   Divide the broccoli into small florets. Rinse them, then cook them in boiling salted water for 10 minutes or in a steamer for 20 minutes. Drain them thoroughly.
  • 3.   In a bowl, mix the fresh cream and 2/3 of the grated cheese with a fork, along with the grated nutmeg. Season with salt and pepper to taste.
  • 4.   Generously butter 4 small gratin dishes and distribute the small broccoli florets in them. Pour the cheese cream mixture on top and sprinkle the surface with the remaining grated cheese.
  • 5.   Bake for 15 minutes. The surface should be golden and gratinated.
  • 6.   Serve hot in the baking dishes.
