Penne with Zucchini Ribbons and Parmesan Chicken

Instructions

  • 1.   Slice the chicken fillets and cook them in a tablespoon of olive oil.
  • 2.   Sprinkle with Espelette pepper.
  • 3.   Peel the zucchini and create ribbons by using a vegetable peeler until the seeds appear.
  • 4.   Sauté the zucchini ribbons in a drizzle of olive oil.
  • 5.   Cook the penne pasta for a sufficient amount of time.
  • 6.   Add the zucchini cream, pressed garlic cloves, salt, pepper, curry, and the sliced chicken.
  • 7.   Pour over the drained penne pasta and add fresh Parmesan shavings and fresh basil leaves.

  • 1 cup of semi-thick cream
  • 1 parmesan
  • 1 teaspoon of curry powder
  • 1 leaf of fresh basil
