1. Preheat the electric fryer to 180°C (350°F).
2. Peel, dice, and wash the potatoes.
3. Dry them well and immerse them in the frying oil for 10 to 12 minutes, until they are golden brown.
4. Meanwhile, slice the chorizo into thick rounds, then cut each round into 4 pieces.
5. Peel and finely chop the onions.
6. In a pan or wok, sauté the onions and chorizo until the onions are translucent and have taken on the color of the chorizo.
7. Once the potatoes are fried, mix them with the onions and chorizo, add parsley and garlic, mix again, and serve immediately!
