Onion and Bacon Omelette

Instructions

  • 1.   Peel and steam the potatoes. They should remain firm.
    Cut them into cubes.
  • 2.   In a greased pan, sauté the sliced onions for 2 minutes. Add the potatoes and bacon, and continue cooking for 2-3 minutes.
  • 3.   In a bowl, beat the eggs with the cream, salt, and pepper. Pour into the pan and cook for 8 minutes over low heat.
  • 4.   Serve with a salad and/or raw vegetables.
