Speculoos Cake with Fromage Blanc and Raspberry Coulis

Instructions

  • 1.   Crush the speculoos cookies and mix with the butter.
  • 2.   Press the mixture into the bottom of a cake pan.
  • 3.   Mix the fromage blanc with the lemon juice, vanilla sugar packets, and sugar. Beat the heavy cream and add it to the mixture, along with the gelatin sheets dissolved in a little water.
  • 4.   Pour the mixture over the speculoos crust.
  • 5.   Let it cool in the fridge for 24 hours.
  • 6.   Before serving, cover with a thin layer of raspberry coulis mixed with gelatin, and let it cool for another hour.
  • 7.   Serve topped with raspberry coulis.

  • 75 g of unsalted butter
  • 500 g of fat-free white cheese
  • 1 lemon
  • 2 bag of vanilla sugar
  • 8 tablespoon of sugar
  • ¼ liter of sour cream
  • 4 leaf of gelatin
  • 1 raspberry coulis
