Tajine with preserved lemons or M'chermel chicken (Morocco)

Instructions

  • 1.   Before cooking, marinate the chicken (with its liver if desired) in the ingredients of the marinade previously mixed.
  • 2.   Thoroughly coat the pieces and refrigerate for half an hour to 2 hours. Soak the olives to remove the saltiness.
  • 3.   In a pressure cooker, place the chicken, add the onions, olives, salt, pepper, turmeric, and 2 glasses of water. Cook for 20 to 30 minutes. Let simmer uncovered for a short time to thicken the sauce.
  • 4.   Add the preserved lemon peels just to heat them up.
  • 5.   Arrange the pieces on a platter, place the preserved lemon peels and olives around them. Mash the liver into the sauce, add the lemon juice, and pour over the chicken.
