Instructions

  • 1.   Peel and pit the peaches. Cut them into pieces.
  • 2.   Mix olive oil, vinegar, honey, salt, and pepper in a bowl.
  • 3.   Mix the pork pieces, peach pieces, and marinade in a salad bowl.
  • 4.   Refrigerate for 1 hour.
  • 5.   After this time, thread the pork and peach pieces onto wooden skewers, alternating them.
  • 6.   Cook the skewers on the barbecue or under the broiler in the oven for about 15-20 minutes, flipping them halfway through cooking.
  • 7.   Serve hot, drizzled with the remaining marinade.
  • 8.   Serve with fresh lemon wedges.
