Vegan Chocolate Mousse with Chickpea Juice in the Thermomix

Here is a completely vegan chocolate mousse made with chickpea juice! By whisking chickpea juice, you can obtain a super firm and shiny "egg white" texture, just like egg whites... without the eggs. So, you will need to use canned chickpea juice to make this dessert. This Thermomix chocolate mousse recipe is made with only 2 ingredients and is absolutely divine, firm, and creamy. It can be stored in the fridge for several days compared to an egg and butter-based cream that can spoil quickly. You absolutely cannot taste the chickpea flavor. No sugar, no butter, in short, your guilty pleasure with fewer calories. A chocolate mousse that is perfect for vegans!

Instructions

  • 1.   Attach the whisk attachment.
  • 2.   Pour 120 grams of chickpea juice (to obtain this quantity, you will need a can with a net weight of 530 grams) into the Thermomix bowl.
  • 3.   Place the lid with the measuring cup.
  • 4.   Mix for 5 min/speed 4.
  • 5.   Remove the whisk attachment.
  • 6.   Transfer to a bowl.
  • 7.   Place 150 grams of dark chocolate in the Thermomix bowl.
  • 8.   Place the lid with the measuring cup.
  • 9.   Mix for 5 sec/speed 6.
  • 10.   Heat for 5 min/50°C/speed 2.
  • 11.   Scrape the sides of the bowl with a spatula.
  • 12.   Incorporate a tablespoon of chickpea juice foam into the melted chocolate, then gently mix the chocolate with the foam by transferring it to the bowl.
  • 13.   Transfer to serving glasses and refrigerate for 2 hours.
