Instructions

  • 1.   In a saucepan, heat the salted milk with nutmeg. Sprinkle the semolina and cook for 10 minutes over low heat, stirring. Add 40 grams of grated gruyère cheese off the heat and let the mixture cool.
  • 2.   Preheat the oven to 180°C (350°F). Heat the tomato sauce and Provence herbs over low heat. Season with pepper and a little salt. With the cooled semolina, shape the mixture into small balls using the palm of your hands. Place them in a baking dish. Cover with tomato sauce and sprinkle with the remaining gruyère cheese. Bake in the oven and serve as soon as the cheese has melted.

  • 60 g of grated emmental
  • 480 g of tomato coulis
  • 1 teaspoon of Provence herb
  • 1 pinch of salt
