Grapefruit and Honey Avocado with Almonds

Instructions

  • 1.   Cut the avocado in half, remove the pit and skin. Cut each half into 5 mm slices and arrange nicely on each plate.
  • 2.   For this step, make sure to collect the juice that will flow when cutting!
    Cut the grapefruit in half or quarters, remove the skin and seeds, then cut slices of grapefruit about 5 mm thick (If the small membranes bother you or are too thick, you will need to extract the pulp from each segment, but it takes longer).
    Arrange nicely in front of the avocado.
  • 3.   In a salad bowl, mix honey, lemon or orange juice, grapefruit juice, and 2 tablespoons of olive oil. Add a small pinch of salt.
  • 4.   Lightly toast the sliced almonds in a pan to enhance their flavors.
  • 5.   Drizzle the avocado with a drizzle of olive oil and sprinkle with coarse salt.
    Season the grapefruit with the honey sauce.
    Sprinkle the whole dish with toasted sliced almonds.
    Serve!

Notes & Suggestions

  • This recipe also works very well with mango instead of grapefruit.

  • 1 tablespoon of lemon juice (optional)
  • 2 handful of sliced almond
