Duck fillets with port sauce

Instructions

  • 1.   Heat 2 liters of water with the bouillon cube. Peel and cut the potatoes and apple into large cubes. Remove the skin from the celeriac and cut it into small cubes. Plunge the vegetables into the boiling water and cook for 15 to 20 minutes over medium heat. Drain the vegetables, then roughly mash them with a fork or a potato masher. Add a little cooking water, if necessary.
  • 2.   Wash and chop the herbs. Heat the oil in a pan and place the duck fillets. Cook for 2-3 minutes on each side for medium-rare, 4-5 minutes for well-done. Season with salt and deglaze with the port. Serve the fillets immediately with their mashed potatoes, sprinkled with herbs.

  • 1 teaspoon of sunflower oil
  • 400 g of duck fillet
  • 60 ml of port
