Chicken Cassoulet (WW)

Instructions

  • 1.   Soak the dried beans in 4 times their volume of cold water for 10 hours, changing the water once or twice.
  • 2.   The next day, peel the carrot and cut it into slices. Peel the onions, stick cloves into one of them, and chop the other one. Peel the garlic. In a casserole dish, heat the duck fat and brown the chopped onion with the chicken wings for 2 minutes. Add the diced tomatoes, beans, carrots, the onion with cloves, garlic, bouquet garni, and pepper. Cover with water, about 2 centimeters above the ingredients. Bring to a boil, cover, and cook over low heat for 40 minutes, until the liquid is almost absorbed: monitor the cooking, partially cover or add water if necessary. Towards the end, season with coarse salt and add the tomato paste.
  • 3.   Prick the sausages with a fork and add them to the casserole dish. Cover and let cook gently for 1 more minute, covered. Remove the bouquet garni, adjust the seasoning. Pour the preparation into a shallow dish or individual casseroles.

  • 1 teaspoon of duck fat
  • 200 g of chicken drumstick
  • 200 g of diced tomato
  • 2 g of peppercorn
  • 1 tablespoon of tomato paste
  • 4 chicken sausages
  • 1 pinch of coarse salt
  • 1 pinch of salt
  • 1 pinch of pepper
