Rabbit Cacciatora

Instructions

  • 1.   Heat the oil in a casserole dish. Sauté the rabbit loins with the shallot for 1 minute. Season with salt and pepper. Add the diced tomatoes and then the wine. Stir and scrape the meat juices. Let cook for 4 minutes while stirring.
  • 2.   Add the two bell peppers, garlic, mushrooms, and rosemary. Incorporate the diluted starch while stirring. Cover and let cook on low heat for 25 minutes: stir occasionally and, if necessary, add a little liquid (water or chicken broth) during cooking.

  • 1 teaspoon of olive oil
  • 4 rabbits
  • 1 shallot
  • 2 diced tomatoes
  • 150 ml of red wine
  • 2 bell peppers
  • 2 garlic cloves
  • 230 g of button mushroom
  • 1 teaspoon of rosemary
  • 1 teaspoon of potato starch
  • 2 tablespoon of water
  • 1 pinch of salt
  • 1 pinch of pepper
