Instructions
1. Heat the oil in a casserole dish. Sauté the rabbit loins with the shallot for 1 minute. Season with salt and pepper. Add the diced tomatoes and then the wine. Stir and scrape the meat juices. Let cook for 4 minutes while stirring.
2. Add the two bell peppers, garlic, mushrooms, and rosemary. Incorporate the diluted starch while stirring. Cover and let cook on low heat for 25 minutes: stir occasionally and, if necessary, add a little liquid (water or chicken broth) during cooking.
