Cod gratin with basil

Instructions

  • 1.   Preheat the oven to 180°C (350°F). Cut the tomatoes into small pieces. In a pan lined with parchment paper, cook the tomatoes for 5 minutes. Then add the mustard, minced garlic cloves, heavy cream, let it reduce for 5 minutes, and sprinkle with polenta. Let the mixture thicken for 5 minutes.
  • 2.   Blend the raw cod fillets. Add this fish puree to the tomato mixture. Add the chopped basil leaves, salt, and pepper. Mix well.
  • 3.   Pour this brandade into a non-stick gratin dish and bake in the oven for 30 minutes.

  • 800 g of tomato
  • 12 teaspoon of mustard
  • 4 garlic cloves
  • 8 teaspoon of light cream (12-15%)
  • 55 g of polenta
  • 480 g of cod
  • 1 teaspoon of fresh basil
  • 1 pinch of salt
  • 1 pinch of pepper
