Piña colada with Thermomix

The Piña Colada is undoubtedly one of the cocktails with the most variations! However, this cocktail created in 1954 in Puerto Rico still has the same basic ingredients: pineapple, rum, and coconut. If you want to stick as closely as possible to the original recipe of Don Ramon, who served this cocktail for 35 years at Caribe Sol until it became the national drink of Puerto Rico, you can set aside the vanilla sugar and pinch of cinnamon! You can replace the coconut milk with 4 scoops of coconut ice cream, which will slightly increase the sweetness, allowing you to remove the vanilla sugar from the list of ingredients. Instructions

  • 1.   The day before, freeze the pineapple for at least 6 hours.
  • 2.   Put 350 grams of sliced and frozen pineapple, 1 packet of vanilla sugar (optional), 1 pinch of cinnamon powder (optional), and 400 grams of coconut milk in the Thermomix. Blend 45 sec/speed 9.
  • 3.   Add 1000 grams of pineapple juice and 300 grams of white rum to the Thermomix. Mix 20 sec/speed 6.
  • 4.   Serve immediately.
