Zucchini and Eggplant Skewers

Vegetarian grilling: these skewers of zucchini cubes and eggplant slices are delicious with a yogurt-lemon-pumpkin seed sauce.

Instructions

  • 1.   Squeeze the garlic into the oil. Season with grilling spices. Cut the eggplants in half lengthwise, then slice them into thin strips. Cut the zucchinis in half lengthwise, then cut them into approximately 8 pieces. Wrap each piece in 2 strips of eggplant, then skewer them. Brush them with the spicy marinade using a brush.
  • 2.   Cut the meat into cubes of about 25 grams, add them to the marinade.
  • 3.   Chop the chives, mix them with the yogurt. Grate some lemon zest on top. Squeeze the lemon and add about 1 teaspoon of juice to the yogurt, season with salt and pepper. Grill the skewers on all sides over low to medium heat for about 15 minutes. Serve with the yogurt sauce.

  • 4 small zucchini
  • 1 garlic clove
  • 1 teaspoon of olive oil
  • 2 teaspoon of Cayenne pepper
  • ½ bunch of chives
  • 300 g of yogurt
  • ½ lemons
  • salt (according to taste)
  • pepper (according to taste)
