The delicious eggplant tatin

Instructions

. Preheat the oven to 180°C (350°F).

. Slice the eggplants into 1 cm thick rounds.

. Sauté them in olive oil with a squeeze of lemon juice until they are well cooked.

. Grease a dish and add pine nuts and rosemary.
5
. Arrange the eggplant slices in the dish, alternating with sun-dried tomatoes.
6
. Cover with puff pastry and bake for 25 minutes.

. It's delicious!
