Instructions

  • 1.   Peel the eggplants. Sauté the shallots in olive oil, then add the eggplants and a little water to prevent burning. Add the minced garlic.
  • 2.   After about half an hour of cooking, mix in tomato paste and tomato sauce, then add the Parmesan cheese.
  • 3.   Pour everything into a casserole dish and add a layer of grated cheese on top.
  • 4.   Bake in a hot oven (375°F/190°C) until it is nicely browned, then serve hot!

  • 200 g of tomato puree
  • 100 g of grated emmental
  • 2 shallots
  • 1 garlic clove
  • 1 tablespoon of olive oil
  • 1 pinch of Provence herb
