Instructions
1. Tenderize the cutlets with a mallet, season with salt and pepper.
Sear them for about 4 to 5 minutes on each side in hot oil.
Remove them and keep them warm.
2. Deglaze the cooking juices with white wine, let it reduce a little.
Mix it with heavy cream.
Thicken if necessary with cornstarch before seasoning.
3. Prepare the mashed potatoes with vegetable broth following the instructions on the package.
Add diced pumpkin (canned, for example) with 2 tablespoons of its juice and sour cream, mix.
Season with salt and pepper.
Serve with the turkey cutlets and the sauce.
