Zucchini and Feta Patties

Instructions

  • 1.   Wash the zucchini, remove the ends, and finely chop them in a food processor.
    Crumble the feta cheese and mix it with the zucchini.
  • 2.   Wash, dry, and chop the herbs.
    Incorporate them with the eggs into the mixture.
  • 3.   Mix the flour, cornstarch, and mashed potatoes until you obtain a smooth batter.
  • 4.   Shape 8 patties and fry them one by one in hot olive oil.
    Serve with herbed cream cheese or tzatziki.

  • 200 g of instant mashed potatoes
