  • 1.   1 packet of dried yeast, measured for 500g of flour
    - 220ml of milk
    - 100ml of water
    - 55g of butter
    - 25g of sugar
    - 9g of salt
    - 1 egg
    - 560g of all-purpose flour
    - Sesame and nigella seeds
  • 2.   In a small saucepan, heat the milk, water, and butter until the butter is completely melted and the mixture reaches a temperature of 25 degrees.
  • 3.   In the bowl of a stand mixer, mix half of the flour, yeast, and sugar.
  • 4.   Add the milk mixture and then the egg. Incorporate the remaining flour mixed with salt, 1 tablespoon at a time, kneading well after each addition.
  • 5.   When the dough is smooth and elastic, shape it into a ball and let it rest for 2 to 3 minutes.
  • 6.   Divide the dough into 8 balls, about the size of a mandarin.
  • 7.   Shape the balls into smooth rounds and place them on a baking sheet lined with parchment paper.
  • 8.   Let them rest for another 5 minutes to relax the dough, then lightly flatten them with the palm of your hand.
  • 9.   Cover and let them rise for 30 to 35 minutes.
  • 10.   Preheat the oven to 180°C (350°F).
When the buns have risen, brush the entire surface with a mixture of egg yolk and water, and sprinkle with golden or white sesame seeds.
