Roasted Autumn Vegetable and Ricotta Pizza

A vegetarian pizza that is both mild and flavorful, with roasted autumn vegetables placed on a ricotta base and topped with mozzarella.

Instructions

  • 1.   Preheat the oven to 220°C (425°F).
  • 2.   Place all the vegetables in a bowl and drizzle with olive oil, salt, and pepper. Mix well. Arrange them on a baking sheet lined with parchment paper. Roast until the vegetables are tender and starting to brown, about 20 minutes.
  • 3.   Place the pizza dough on a baking sheet lined with parchment paper. Spread a layer of ricotta, then add the grilled vegetables. Sprinkle with grated mozzarella and drizzle with olive oil. Finish with rosemary. Season to taste and bake for 20 minutes.

  • 250 g of carrots cut into sections
  • 15 ml of olive oil
  • 1 pizza dough
  • 1 tablespoon of rosemary
  • 100 g of grated mozzarella (optional)
  • 100 g of mascarpone (optional)
  • 100 g of ricotta (optional)
  • salt (according to taste)
  • pepper (according to taste)
