Mushroom and Spinach Pasta

Instructions

  • 1.   Cook the pasta according to the recommended cooking time minus 1 minute (e.g. if 7 minutes is recommended, cook for 6 minutes).
  • 2.   Meanwhile, finely chop the shallot, garlic, and mushrooms, and sauté them in a pan with a tablespoon of olive oil.
  • 3.   Once the mushrooms are golden, add the spinach and stir until wilted.
  • 4.   Add the soy cream, salt, and pepper, and let simmer for a few minutes to obtain a creamy sauce.
  • 5.   When the sauce is ready, add the drained pasta to the pot and let simmer for another minute while stirring. Serve and enjoy! Bon appétit!

  • 250 ml of soy cream
  • 1 shallot
  • 1 garlic clove
  • 1 tablespoon of olive oil
