Lentil and Zucchini Salad with Lime

Instructions

  • 1.   1. Cook the lentils according to the instructions on the package, then let them cool. Pour them into a salad bowl. Wash the zucchini. Cut them into quarters lengthwise and dice them. Peel and thinly slice the onion.
  • 2.   2. Add the zucchini and onion to the salad bowl with the lentils. Add the coriander, lime juice, salt, and pepper. Gently mix.
  • 3.   3. Prepare the dressing: In a bowl, put the mustard, add the vinegar, salt, and pepper. Whisk with a fork, then add the olive oil and water.
  • 4.   4. Serve in transparent verrines or small bowls arranged on a nicely decorated serving tray and refrigerate. Serve the dressing on the side.

  • 500 g of zucchini
  • 1 onion
  • 18 teaspoon of fresh coriander
  • 2 limes
  • 2 pinch of salt
  • 2 pinch of freshly ground pepper
  • 1 teaspoon of wine vinegar
  • 2 teaspoon of mustard
  • 6 teaspoon of olive oil
  • ¾ tablespoon of water
