Light Red Fruit Panna Cotta

Instructions

  • 1.   Soften the gelatin sheets in cold water for 5 minutes.
  • 2.   In a saucepan over low heat, mix the milk, cream, and sweetener (and a flavor of your choice or diced fruits). Bring to a boil for 2 minutes, then remove from heat and stir in the squeezed gelatin.
  • 3.   Pour the mixture into glasses and let it cool before refrigerating for 3 hours.
  • 4.   Meanwhile, wash and place the raspberries in a saucepan. Heat and mash the raspberries into a puree, then add the packet of vanilla sugar. Boil while whisking until thickened. (Add an extra gelatin sheet if you prefer a firmer coulis.) Let the red fruit coulis cool for 20 minutes, then pour it over the cooled creams. Serve.
