Braised Endives with Honey

For those who are a little wary of the bitterness of endives, this recipe will delight you thanks to the addition of a little honey.

Instructions

  • 1.   Peel and finely chop the shallot. Remove the outer leaves of the endives that may be damaged and remove a small cone at the base, which is quite bitter. Cut them in half.
  • 2.   Put the olive oil in a casserole dish. Sauté the shallots over medium-high heat for 2 minutes, then add the endives, with the cut side facing the inside of the casserole dish. Let cook for 1 to 2 minutes, then add the honey and pour in the chicken broth.
  • 3.   Cover and let cook for 15 minutes. Partially uncover and let cook for an additional 10 minutes.
