Zucchini, Chickpea, and Chorizo Sauté (WW)

Instructions

  • 1.   Wash and dry the zucchini. Cut them into small cubes. Peel and finely chop the shallot. Cut the chorizo into small cubes. Drain the chickpeas. Rinse the cherry tomatoes and cut them in half lengthwise.
  • 2.   Heat the olive oil in a sauté pan. Add the zucchini cubes, shallot, and chorizo. Season with salt and pepper, mix well. Cover and cook for 20 minutes over medium heat, stirring occasionally.
  • 3.   Add the cherry tomatoes and chickpeas, mix well and cook for 5 minutes over medium heat. Remove from heat, add the chopped coriander and basil, and serve.

  • 2 zucchinis
  • 1 shallot
  • 30 g of chorizo
  • 270 g of chickpeas (canned, drained weight)
  • 10 cherry tomatoes
  • 2 teaspoon of olive oil
  • 1 teaspoon of ground coriander
  • 10 leaf of fresh basil
  • salt (according to taste)
  • pepper (according to taste)

    I personally added triple the amount of chorizo for more flavor. Very simple recipe but very good.
