Lemon Tart with Companion

An essential pastry, a tangy tart... In short, simply an excellent dessert! Whether for a family gathering or just for Sunday afternoon tea, this sweet treat will delight both young and old. It's a must-try if you've never made it yourself ;)

Instructions

  • 1.   Make the shortcrust pastry for the lemon tart by putting the flour, softened butter, sugar, and salt in the bowl of the Companion robot fitted with the kneading blade. Start the robot on speed 8 for 2 minutes.
  • 2.   Then add the egg yolks and water, and run the robot on speed 6 for another 30 seconds. You will see a ball forming.
  • 3.   Roll out the dough with a rolling pin and place it in a tart pan. Bake for 25 minutes at 180°C (350°F).
  • 4.   Make the lemon curd by squeezing the lemons.
  • 5.   In the Companion bowl fitted with the beater, put the eggs and sugar and mix for 3 minutes on speed 6.
  • 6.   Add the cornstarch, butter, and lemon, and set the program to "dessert cream" for 12 minutes at 90°C (195°F), speed 5.
