Moroccan Chicken Tajine

Exotic flavors of Africa in a delicious tajine!

Instructions

  • 1.   Preheat the oven to 210°C (410°F). Cut the chicken fillets in half. Peel the onions and slice them into strips. Rinse and slice the tomatoes thinly. Rinse and cut the zucchini into thick slices without peeling it. Peel, rinse, and slice the sweet potato into thin rounds. Rinse the preserved lemon, and cut it into 4 pieces.
  • 2.   Heat the oil in a clay tajine pot that can be used on the stovetop. Sauté the onions for 2 minutes without letting them brown. Off the heat, layer the tomatoes, zucchini, and sweet potatoes in the pot. Sprinkle with pressed garlic and ginger using a garlic press, and sprinkle with spices. Add the pieces of preserved lemon and olives. Place the chicken fillets on top. Season with salt and pepper. Cover with the lid and bake for 35 minutes.
  • 3.   Let the tajine rest in the oven for 15 minutes. When serving, garnish with a few sprigs of coriander and present the dish at the table with its lid on.

  • 400 g of chicken breast
  • 2 onions
  • 2 tomatoes
  • 1 zucchini
  • 240 g of sweet potato
  • 1 small preserved lemon (salty)
  • 2 teaspoon of olive oil
  • 1 garlic clove
  • 1 teaspoon of ginger powder
  • 1 teaspoon of ras el-hanout
  • 5 green olives
  • 10 bunch of fresh coriander
  • 1 pinch of salt
  • 1 pinch of pepper
