Fish and Broccoli Curry (WW)

Instructions

  • 1.   In advance, rinse and pat dry the fish. Season with salt and pepper and set aside. Bring a large pot of salted water to a boil, add the broccoli florets and cook for 5 minutes. Plunge them into ice water, drain and set aside. Dissolve the fish stock in 30 cl of water. Heat the oil in a casserole dish, sauté the onion for 2 minutes over low heat. Sprinkle with garlic, ginger and curry, add the frozen shrimp and stir for 1 minute. Pour in the fish stock and coconut milk, bring to a boil and let reduce for 5 minutes.
  • 2.   Place the fish pieces, drizzle with lemon juice. Cover and cook for 10 minutes over low heat. Stir in the broccoli and continue cooking for 3 minutes. Adjust the seasoning with salt if necessary and pepper.
  • 3.   Just before serving, sprinkle with chopped coriander and mix. Serve in a shallow dish.

  • 1 teaspoon of fish stock
  • 2 teaspoon of peanut oil
  • 1 onion
  • 1 teaspoon of ginger powder
  • 2 teaspoon of curry powder
  • 8 peeled shrimps
  • 150 ml of coconut milk
  • ½ lemon juice
  • 6 sprig of fresh coriander
  • 1 garlic clove
  • salt (according to taste)
  • pepper (according to taste)
