Zucchini-Bacon Crustless Tart

Instructions

  • 1.   Preheat the oven to 210 °C (410 °F). Rinse and slice 3 zucchinis into rounds. Use a peeler to cut the last one into thin strips. Set aside.
  • 2.   In a bowl, crack the eggs and whisk them into an omelette with the milk. Add the almond powder and flour. Stir in the basil and salt. Mix vigorously until you obtain a smooth and homogeneous batter.
  • 3.   In a non-stick tart pan with a diameter of 24-26 cm (9-10 inches), arrange the zucchini rounds and bacon slices in a rosette pattern, alternating them and starting from the center. Finish with the zucchini strips, letting them extend beyond the pan. Pour the tart batter over the top. Fold the zucchini strips that extend towards the center. Bake in the oven for 25 minutes. The tart should be golden and crispy.
