Tomato Feta Onion Basket

Instructions

  • 1.   Cut the puff pastry into four pieces (easier with a rectangular pastry)
  • 2.   Cut the tomatoes into small pieces and distribute them on the 4 pieces of puff pastry
  • 3.   Do the same with the feta and onion
  • 4.   Add a pinch of herbes de Provence (it gives a nice flavor but it's optional)
  • 5.   Fold up the corners of the pastry to form a small basket
  • 6.   Bake at 190°C (375°F) for about 20 minutes, but keep an eye on it, you can take it out when it starts to brown
  • 7.   Usually, one basket is enough with a small salad for a light dinner!

Notes & Suggestions

  • You can also use goat cheese, it's delicious too! The baskets can be easily reheated in the microwave and still taste great!
