Light Red Fruit Panna Cotta

Instructions

  • 1.   In a saucepan over low heat, pour the milk, heavy cream, and sweetener. Bring to a boil, then add 2g of agar agar. Let it boil again while continuously whisking for 2 minutes.
  • 2.   Pour the mixture into glasses and let it cool for 1 hour in the refrigerator.
  • 3.   Meanwhile, wash and crush the raspberries. In a saucepan, heat the raspberry puree with the packet of vanilla sugar, and add 1g of agar agar. Let it boil while continuously whisking for 2 minutes. Let the red fruit coulis cool for 20 minutes, then pour it over the cooled creams. Serve.
