The word "salade" comes from the Italian "insalata," meaning "salted dish" (past participle of the late Latin "salare," giving "herba salata," a typical dish in ancient Rome made with salted vegetables). This word can also be found in Provençal as "salada." The Romans used to preserve olives, radishes, and other vegetables in brine or salted oil and vinegar. In French, the word has been attested since 1335.
