Coconut Curry with Squid

Instructions

  • 1.   Slice the onion and sauté it in a pan with 1 tablespoon of olive oil.
  • 2.   Cut the deseeded peppers into strips and cook them with the onion for 5 minutes.
  • 3.   Add the squid. Sprinkle with 1 heaping tablespoon of curry powder and mix.
  • 4.   Add the deseeded and diced tomatoes. Season with salt and pepper and pour in the coconut milk.
  • 5.   Simmer covered for 30 minutes. Cook the rice. Serve with rice and cilantro.

  • 1 tablespoon of curry powder
  • 4 tomatoes
  • 40 cl of coconut milk
  • 500 g of Thai rice
  • 1 pinch of fresh coriander
  • salt (according to taste)
  • pepper (according to taste)
