Grilled Butternut Squash

Instructions

  • 1.   Preheat the oven to 180°C (350°F).
  • 2.   Cut the Butternut squash in half and drizzle with olive oil. Roast for 15 minutes. After cooking, scrape out the inside of the squash with a sturdy spoon.
  • 3.   Mix all the ingredients with the Butternut squash flesh to form a stuffing. Season to taste. Place the stuffing in the Butternut squash halves and bake for 35 to 40 minutes.

  • 1 butternut squash
  • 1 tablespoon of olive oil
  • 1 chicken breast
  • 6 cherry tomatoes
  • ½ red onions
  • 2 eggs
  • 1 tablespoon of cottage cheese
  • 1 teaspoon of thyme
  • 1 pinch of nutmeg
  • salt (according to taste)
  • pepper (according to taste)
