Avocado and Green Apple Tartare with Curry

The avocado is flavorful and creamy while the green apple is crunchy and tangy. The combination of the two creates this absolutely delicious tartare.

Instructions

  • 1.   1. Peel and finely chop the shallot. Wash and dry the apples. Cut them into quarters, remove the core and seeds. Peel and pit the avocados, then cut them into quarters. Cut everything into small cubes and put them in a bowl with the shallot.

    1. Squeeze the lemons. Drizzle the cubes with lemon juice, peanut oil, a few drops of sesame oil, and Tabasco. Season with salt, sprinkle with curry, and mix. Chill in the refrigerator.


    2. After removing the stem, blanch the bell pepper in boiling water for 1 minute. Drain and peel it. Remove the seeds and slice the flesh.


    3. Fill a ramekin with the avocado and apple salad. Unmold it onto a plate. Repeat the process for each plate. Garnish with strips of bell pepper. Serve immediately. Photo credit: Sucré Salé.

  • 1 tablespoon of curry powder
  • 1 teaspoon of tabasco
