Spanish tortilla

Thick omelette garnished with typically Spanish potatoes, considered in the past as a "dish of poor" a contrario of the omelette nature. It is eaten most often as a dish, accompanied by a salad. A good potato omelette should be a little slobbery, not quite dry, with the potatoes fried in olive oil and crispy.

  • 3.   Heat the oil in the pan
  • 4.   Put the potatoes and onions in the pan. Cover. (important: potatoes must cook in both oil and steam).
  • 5.   Once the potatoes are well cooked (it is necessary that the tip of a couteur can be driven in easily), empty the oil in a container.

  • 7.   Add beaten, salted and peppered eggs.
  • 8.   Mix gently (do not make mashed potatoes!) Put some oil in the pan and pour in the mixture.

  • 10.   Once the bottom is well browned, turn the tortilla on a plate. (This operation is tricky because the eggs on the top are not cooked and the oil in the bottom is very hot.)
  • 11.   Slide the tortilla into the pan to brown the other side.
