Shallot Sauce for Fish

. Sauté the shallots in butter over very low heat for about ten minutes. Step 3:

. Add the fish stock and a sprig of thyme, and season. Step 5:

. Add the heavy cream and cook for 20 minutes over low heat and covered. Step 6:

. Check if the sauce coats the back of a spoon, if not, reduce the sauce without a lid until it reaches a good consistency.
