Shallot Sauce for Fish

Instructions

  • 1.   Step 1:
  • 2.   Slice the shallots into thin strips. Step 2:
  • 3.   Sauté the shallots in butter over very low heat for about ten minutes. Step 3:
  • 4.   Add the glass of white wine and reduce by half. Step 4:
  • 5.   Add the fish stock and a sprig of thyme, and season. Step 5:
  • 6.   Add the heavy cream and cook for 20 minutes over low heat and covered. Step 6:
  • 7.   Check if the sauce coats the back of a spoon, if not, reduce the sauce without a lid until it reaches a good consistency.

  • 200 g of shallot
  • 30 g of butter
  • 2 glass of liquid fresh cream
  • 2 glass of fish stock
  • 1 glass of dry white wine
  • 1 sprig of thyme
  • 1 lemon juice
  • salt (according to taste)
  • pepper (according to taste)
