Thermomix Muesli

Here's a recipe that is sure to please, a delicious homemade muesli that will replace store-bought ones. A simple homemade muesli recipe made in the Thermomix that can be customized according to your preferences. Enjoy it for breakfast with milk, mix it with yogurt... however you like. Instructions

  • 1.   Add 40 grams of coconut oil (try to place the oil at the bottom of the bowl) and 80 grams of liquid honey (also try to place the honey at the bottom of the bowl) in the Thermomix. Heat for 3 min/50°C//speed 2.
  • 2.   Put 85 grams of dried apricots in the Thermomix and pulse 2 times on Turbo for 1 sec.
  • 3.   Add 80 grams of almonds, 60 grams of hazelnuts, and 20 grams of pecans in the Thermomix. Pulse 3 times on Turbo for 1 sec.
  • 4.   Add 300 grams of rolled oats, 40 grams of raisins (I used 20g of cranberries and 20g of white mulberries), 80 grams of sunflower seeds (I used 50g of pumpkin seeds and 30g of sunflower seeds), 45 grams of shredded coconut, and ½ teaspoon of vanilla extract (optional) in the Thermomix. Heat for 30 sec/50°C//speed 3, using the Thermomix spatula to help.
  • 5.   Transfer to a baking sheet lined with parchment paper and bake in a convection oven at 150°C for 25 min.
  • 6.   Halfway through baking, stir the muesli with a spoon and let it continue until golden. If it's still soft, that's normal, it will become crispy afterwards ;).
  • 7.   Enjoy without moderation. To keep it longer, a tightly sealed glass jar or an airtight container will be perfect. .
