. Preheat the oven to 180°C (350°F).

. Roll out the pizza dough on a baking sheet lined with parchment paper.

. Spread the tomato paste on top.

. Clean and cut the zucchini into thin strips using a mandoline.

. Peel and finely chop the onion.

. Peel and cut the beet into thin slices using a mandoline.

. Spread the vegetables on the dough, along with the olives, and sprinkle with grated gruyère cheese.

. Season with salt and pepper, and drizzle with olive oil.

. Bake for 20 minutes.

. Serve hot.
