Thermomix 3 Citrus Jam

Orange, lemon, grapefruit... it's the winning trio for breakfast with this Thermomix citrus jam. When these three citrus fruits come together in a jam, they offer new sensations to the palate. It's as if an unknown fruit has just been discovered. Don't fear the acidity of the lemon and grapefruit, their tangy taste is greatly softened by the sugar in the jam. If you love citrus fruits, make this jam and you won't be disappointed!

Instructions

  • 1.   Place 2 untreated orange zests, thinly sliced, 6 peeled, seeded, and chopped oranges, 1 split vanilla bean, 1 peeled, seeded, and chopped pink grapefruit, 1 peeled, seeded, and chopped lemon, and 500 grams of powdered sugar in a container.
  • 2.   Stir so that all the fruit pieces are well coated with sugar.
  • 3.   Let it sit at room temperature for 12 hours.
  • 4.   Remove the vanilla bean and transfer the contents of your container to the Thermomix bowl.
  • 5.   Mix 20 sec/speed 3, then cook 25 min/100°C/speed 1 with the varoma instead of the measuring cup on the lid to prevent splattering.
  • 6.   Place 4 grams of agar-agar and 40 grams of water in a container.
  • 7.   Dissolve the agar-agar in the water and pour it into the Thermomix bowl.
  • 8.   Cook 5 min/100°C/speed 2 with the varoma instead of the measuring cup on the lid to prevent splattering.
  • 9.   Transfer to jars, close the lids, and turn the jars upside down.

  • 6 oranges
  • 1 vanilla bean
  • 1 grapefruit
  • 1 lemon
  • 500 g of powdered sugar
  • 4 g of agar agar
  • 40 g of water
