Instructions

  • 1.   Sauté the sliced mushrooms in butter, add 2 tablespoons of white wine, let it reduce, then add the heavy cream, salt, and pepper.
  • 2.   Prepare 1 liter of broth.
  • 3.   In a sauté pan, sauté the onions until golden. Add the rice and cook for 2 or 3 minutes while stirring.
  • 4.   Add the remaining white wine and add 1 ladle of broth. Let it absorb, then add the broth to the rice LADLE by LADLE.
  • 5.   Once the broth is absorbed, add the Parmesan cheese.
