Avocado, cherry tomato, mozzarella and quinoa salad

. Cook the quinoa in a large pot of salted boiling water (about 10 minutes). Drain and let cool.

. Wash and cut the cherry tomatoes in half.

. Remove the skin and pit from the avocados and cut them.

. Cut the mozzarella.

. Chop the mint.

. In a salad bowl, mix everything together.

. Drizzle with a dash of oil, salt, and pepper.
