LOW GI SNICKERS by Marie Laure Andrée

Attention: even low GI treats are still treats! And if you're watching your figure, this kind of treat should remain an occasional indulgence! Luckily, these snickers can be stored in the refrigerator for a few days and also freeze perfectly well.

Instructions

  • 1.   Prepare the biscuit: blend the cashews, then mix them with the flour, sugar, and salt. Add the coconut oil, coconut milk, and mix well.
  • 2.   Pour this batter into a loaf pan lined with parchment paper, spread evenly, and bake at 180°C for about 20 minutes. Let it cool.
  • 3.   Prepare the coconut caramel: pour the coconut milk into a small saucepan with the salt and sugar, and simmer for 8 to 10 minutes (it will reduce). Let it cool.
  • 4.   Mix the coconut caramel with the peanut butter, then spread the resulting cream over the biscuit (in the loaf pan lined with parchment paper). Gently press the peanuts on top. Remove everything from the loaf pan, cut into 10 bars, and place in the freezer for 2 hours.
  • 5.   Melt the baking chocolate in the microwave or in a double boiler, then add the coconut oil. Using a teaspoon, coat each snicker with chocolate, then place in the freezer to harden the chocolate. Take out the snickers to also coat the bottom.
  • 6.   Store in the refrigerator or freeze.

  • 110 g of t150 spelled flour
  • 40 g of cashew nut
  • 45 g of coconut oil
  • 35 g of coconut sugar
  • 55 g of coconut milk
  • 1 pinch of salt
  • Pour le caramel :
  • 80 g of coconut milk
  • 1 pinch of salt
  • 70 g of peanut butter
  • 60 g of unsalted roasted peanut
  • Pour la couverture :
  • 180 g of 70% dark chocolate
  • 1 tablespoon of coconut oil
