Cauliflower croquettes (gluten free, cow's milk free)

A very original way of cooking the cauliflower. To test absolutely, it is tasty and mellow and super easy to do.

Instructions

  • 1.   Take the bouquets of your cauliflower and keep the stems to make a soup for example.
  • 2.   Cook the bouquets in boiling salted water or steam until they are tender. Drain and pour in a bowl. Crush them with a fork or with a puree press.
  • 3.   Preheat your oven to 190 ° C.
  • 4.   Add the bread crumbs and mix.
  • 5.   Add the cheese and a little salt.
  • 6.   Add an egg and mix well.
  • 7.   Chop the chives with a pair of scissors over the bowl and mix. Taste and adjust the seasoning.
  • 8.   Form a dozen croquettes with your hands. Wet your hands regularly, to make smooth croquettes. Place them as you go on a baking sheet lined with baking paper.
  • 9.   Brush the croquettes with olive oil and bake for about fifteen minutes, until they are golden brown. Serve warm with a small sauce.
