1. Remove the florets from your cauliflower and save the stems to make a soup, for example.
2. Cook the florets in salted boiling water or steam them until tender. Drain and transfer them to a bowl. Mash them with a fork or a potato masher.
3. Preheat your oven to 190°C (375°F).
4. Add the breadcrumbs and mix.
5. Add the cheese and a little salt.
6. Add an egg and mix well.
7. Finely chop the chives over the bowl using a pair of scissors and mix. Taste and adjust the seasoning if necessary.
8. Shape about ten croquettes with your hands. Regularly wet your hands to make smooth croquettes. Place them on a baking sheet lined with parchment paper as you go.
9. Brush the croquettes with olive oil and bake for about fifteen minutes, until golden brown. Serve warm with a small sauce.
