Flambé Baguette

The flambé tart (Flammekueche in Alsatian)! You can't miss it when you live in Alsace. I propose a quick version, without a pie crust: the flambé baguette. You can make it for an appetizer or a meal, it doesn't matter. In any case, it's just delicious and quick to make. Great when friends show up unexpectedly at home!

Instructions

  • 1.   Preheat the oven to 200°C (400°F).
    Cut the baguette in half lengthwise and then again in half widthwise. Set aside.
  • 2.   Peel and thinly slice the onion (using a mandoline is practical). Mix the cottage cheese and sour cream. Season with salt, pepper, and add a pinch of nutmeg if you like.
  • 3.   Spread the mixture on the bread, sprinkle with bacon bits, add some onions, and sprinkle with cheese. Bake for about 15 minutes.
    It's ready! Serve with salad.

Notes & Suggestions

  • The recipe I propose contains sour cream and cottage cheese (2/3 sour cream to 1/3 cottage cheese). You can make it with only cottage cheese or only sour cream (or adjust the proportions): the important thing is that it suits you.
    I propose the gratin version of the flambé baguette since I add grated cheese to it, but you can add Munster cheese if you like, it's delicious!
